Recipe adapted from my Grandmom’s recipe

Ingredients:
1/2 lb ground turkey (or beef, or leave this out for a vegetarian-friendly chili)
1/2 onion (I like to use sweet onions)
1/2 bell pepper (any color)
1 packet chili seasoning (I used mild and low sodium)
1 can crushed or diced tomatoes
1 can or jar of tomato sauce (you can also use 2 jars of traditional tomato sauce instead of the crushed or diced if you don’t like tomato chunks)
1 potato, peeled and diced
*choice of additional vegetable: I used squash here but mushrooms are also good in this
1 can red kidney beans (or whatever kind you prefer)
1/2 tablespoon brown sugar
*I also add some cajun seasoning
salt & pepper, to taster
cheddar cheese for topping
tortilla chips (or bread or rice)

Directions:
Brown meat with a little olive oil in frying pan. Meanwhile, pour crushed tomatoes and tomato sauce into a large pot and mix together over medium heat. Add browned meat to sauce, stir. Stir in seasoning. Cook vegetables together in frying pan with about a tablespoon of olive oil, seasoning with salt and pepper to taste (add potatoes, onions, peppers, then squash or mushrooms last). Once softened, add to the pot. Then drain the beans, add, and stir together. Lastly, add brown sugar and cajun seasoning, stirring to mix well.
Top with grated cheddar cheese and tortilla chips.

I call this my catch all chili because it is literally just that. I don’t necessarily follow a strict recipe as far as adding specific vegetables, I usually add some of whatever I have on hand. The base of my recipe comes from my Grandmother’s recipe (she uses 2 jars of traditional tomato sauce, ground beef, and red kidney beans). The rest is a mixture of my own ideas, things I’ve read, and ideas that my sister-in-law has given me (she gave me the idea for the brown sugar and the notion that it’s ok to stray from the traditional chili recipe). The result is extremely delicious, and especially so for the fall and winter!
