Chocolate Chip Banana Bread

I feel like most of my recipes (if I’ve even ventured to make anything lately) have been last minute recently. As organized as I think I am, meal planning is definitely one of my weak points. However, I like to think that that gives me more room to be inspired 🙂 At any rate, this spontaneous homemade chocolate chip banana bread was absolutely delicious (though I’m sure it would have been just as good if I’d planned on baking it, too!)!

Ingredients:
1 cup granulated sugar
8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
1/2 teaspoon vanilla
3 ripe bananas (I used 2 and 1/2)
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt (I used sea salt)
1/2 cup mini chocolate chips (you can use whatever kind you prefer, I also used a little more than a 1/2 cup)

Directions:

Preheat the oven to 325 degrees. Butter a 9 x 5 x 3 inch loaf pan (I used a 1 quart Pyrex dish).

Cream the butter and sugar in a large bowl until light and fluffy. Then, add the eggs one at a time, mixing well between additions. Lastly, add the vanilla. In a small bowl, mash bananas with a fork. Add the milk and cinnamon and mix together. In another bowl, combine the flour, baking powder, baking soda, and salt.

Add the banana mixture to the sugar and butter mixture and stir until combined. Add the dry ingredients, mixing just until blended or until the flour disappears. Then, add the chocolate chips.

Pour the batter into prepared loaf pan and bake for 1 hour to 1 hour and 10 minutes (I checked mine after an hour and took it out after another 5 minutes), or until toothpick inserted in the center comes out clean. Remove bread from pan and cool completely before slicing (or serve slightly warm with butter)! Yum!

Additional serving suggestions: spread slices with honey or serve with ice cream.
