I know I have posted this recipe before but I’m posting it again because it is my absolute, all-time favorite cake (and I wasn’t 100% happy with my pictures from the last post). I actually don’t even know if I’ve made this cake since last year which is probably good news for my waistline as I could eat this entire cake (and any leftover icing there may be)! I’m thinking about trying to make these into cupcakes (maybe halve the recipe and see how that works first) so that they take a little less time and are easier to manage (or consume!). I’ll let you know how it goes 🙂

For the cake:
Ingredients:
3 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon cinnamon
3 eggs, beaten
1 1/4 cups vegetable oil
1 1/2 teaspoons vanilla extract
1 8 oz can crushed pineapple, drained
1 cup chopped pecans
2 cups chopped firm ripe banana

Directions:
Preheat oven to 350 degrees and grease and flour three cake pans.
Sift flour, sugar, salt, baking soda, and cinnamon together. Add eggs and oil to the dry ingredients and stir with a wooden spoon just until ingredients are moistened. Stir in the vanilla, pineapple, and pecans. Add the bananas last and stir. Spoon the batter into the prepared cake pans and bake for 25- 30 minutes, or until a wooden pick inserted in center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely before frosting.

For the frosting:
Ingredients:
1 pound cream cheese, softened
4 cups sifted confectioners’ sugar
1 cup unsalted butter, softened
1 teaspoon vanilla extract

Combine cream cheese, sugar, and butter on low speed until mixed well. Increase speed to high and mix until light and fluffy. Reduce speed to low and add the vanilla before raising the speed to high and mix.

I made this again for Easter this year and everyone loved it! It’s a favorite in our family 🙂 I also thought it would be a perfect post for today since it is a southern cake (and a belle of a dessert at that) and the Kentucky Derby is this weekend! My dad and godfather have always been into horse racing (my parents even went to the Kentucky Derby when they were younger) so I’ve been watching it for as long as I can remember. I love the big hats, the fancy dresses, the sophisticated drinks, and everything else about it! Will you be watching it on Saturday? All dressed up?!
